Organic milk from grass fed cows contains higher levels of omega-3 fatty acids. Grass fed, pasture-roaming cows’ milk contains up to 50 percent more omega-3 fats compared to factory farm cows, according to Dr. Jonny Bowden’s 150 Healthiest Foods on Earth. This is due to a natural diet rich in grass, insects, and soil.

Vat Pasteurization: A Happy Medium?

Unlike standard pasteurization, which is designed to handle huge volumes of milk at high temperatures, vat pasteurization heats the milk at lower temperatures but for a longer duration. As part of the process, the milk is held at 145°F for 30 minutes and then cooled as quickly as possible.

Proponents of this method say the milk is of a higher quality and tastes better than milk put through ordinary pasteurization. Under this system, the milk is not homogenized, separated, or standardized. Handling the milk as little as possible safeguards more of the milk’s nutritional value and cream content, as well as its farm-fresh flavor. Many small family dairies such as California’s Strauss Family Creamery, Ohio’s Hartzler’s Family Dairy, and Iowa’s Kalona Organics now sell vat-pasteurized milk. Whole Foods now sells a variety of vat pasteurized dairy products. Now that you have all the information on vat and ordinary pasteurized and homogenized milk, you can make your own decision about which version you prefer. If I were a milk drinker, I would go for raw milk as my first choice and any other type of low-fat milk as a second choice. My reasoning is that if I’m not consuming raw milk with all its amazing nutritional value then I would opt for a lower fat version of milk because at that point it’s about weight control benefits. It’s that simple.
